BASIC FRIED RICE
this was one of the first recipes that got me through college, passed down from my parents. i grew up with this fried rice. it was affordable and accessible, considering all of the ingredients were always readily available in my family fridge. i learned simply by watching my dad cook it over and over, and when i first fed it to my partner upon moving in together, her mind was blown.
here's what you need to do.
ingredients (makes 4 servings):
- 4 cups of cooked jasmine rice
- 4 eggs, beaten
- 4 green onions, chopped
- 2 cloves garlic, minced
- 4 chinese sausages, sliced (i recommend kam yen jan brand)
- golden mountain seasoning sauce
- salt + pepper
- neutral cooking oil
steps:
- add a thin layer of oil to nonstick pan on medium heat. add sausages and green onion once oil is heated. saute.
- once you smell the aromatics of the green onion, add garlic. saute until you smell the garlic.
- add rice, then pour eggs over everything. stir-fry until everything's combined.
- add seasoning sauce. how much? whatever your heart tells you. to be on the safe side, aim for at least three big circles of sauce. add a liberal amount of salt and pepper too. stir until everything's combined.
- taste. season more to adjust if need be.
- turn off heat and enjoy however you like.
